Porto Novo, Nov 21 (Inforpress) – Porto Novo’s Planalto Norte cheese, Ark of Taste product, 12 years ago, is the highlight in Binter Cabo Verde’s NT magazine, which classifies the product as a “symbol of resistance” from a community battered by drought
“This cheese is a symbol of the endurance, courage, love to the land and hope of such a suffering community,” reads the magazine, which admits that “no cheese will be made the same” in the world “because the weather, the pasture and the goats themselves are animals that resist and have adapted to that adversity”.
Raw goat’s milk cheese, which is handcrafted on the Planalto Norte of Porto Novo, was awarded the Ark of Taste product in 2007 by the Slow Food Foundation, based in Italy, and also in 2017, awarded by the same international institution, with the medal “Slow Cheese Award”.
Following the recognition of this cheese internationally, thanks to its participation in recent years at the world taste fair in Italy, cheese producers now define as challenges to “improve” the quality of the product and focus on its certification. António Lima, a leading producer of fresh and ripened cheese on this plateau, explained that this product, due to its “great quality”, is among “the best in the world”, but producers have a responsibility to continue to improve it “with focus on its certification. ”
